Mountain House freeze-dried foods are sealed in airtight NITROGEN PACKED #10 cans or sealed pouches. A minimum of 98% of the residual oxygen has been removed. Our unique canning process uses both vacuum oxygen removal and nitrogen flushing. This is a time consuming and slightly more costly process...but well worth it. It is the same process mandated by the U.S. Military (for whom we also can). Our foods have the longest shelf-life available...up to 25 years! And since Mountain House has been around for 35 years they know first hand!
We invite you to compare. Each can is enamel coated inside and out for double protection. The can contents are protected until you are ready to open and use them. After opening, we recommend using the contents within 2 to 3 weeks for best results and taste; using the convenient resealing plastic lid between uses. "Freeze-drying" is a unique process that provides product characteristics that cannot be achieved with any other food processing method. We start by using fresh or cooked foods then flash freeze them in a special vacuum chamber that reaches -50°F. As low-level heat is applied (much less than dehydrating), the ice crystals evaporate without going back to the liquid phase. This process, called "sublimation", removes approximately 98% of the moisture and prevents the food from spoiling. The ultimate long term storage.
Freeze-drying provides very unique benefits and advantages over other food processing methods. Frozen foods maintain their fresh flavor, but they must remain frozen. Dehydrated and canned foods are shelf-stable, but their high-temperature processing reduces their flavor, texture, color, and nutrients. Mountain House has a firm commitment to produce high quality food products in the cleanest, most modern food processing plant. Our facilities have continuous USDA and FDA inspections. We use only the highest quality meats, poultry, eggs, and vegetables--NO SUBSTITUTES. Every batch of food we produce is tested, and re-tested again, but we don't stop there! We continue quality control (QC) testing and sampling during the entire canning process. Even then we're not finished. We pull off random cases from each run for further QC inspections. Afterwards, our QC department holds each completed run until the testing is completed. Only then are our foods ready to leave our facilities.
